For bulgur meatballs;
Put the bulgur and the semolina in a mixing bowl.
Add enough hot water to pass them over and cover with paper towels and let steep for 15 minutes.
When your bulgur mixture is ready, add tomato paste, salt and flour and knead.
Then add the egg and continue kneading until it becomes a paste.
Chickpea sized pieces from the mortar and roll.
For the soup;
Finely chop the onion and peppers.
Put the pan in the stove and add sunflower oil and heat it.
Add onions and peppers and saute.
Add the tomato paste and roasting and continue sautéing.
Add the hot water and let it boil.
When your water boils, add the bulgur meatballs and cook for 8 – 10 minutes, stirring occasionally.
Add the lentils, chickpeas, salt, pepper, dried mint and ground red pepper that you have boiled, cook for another 10-15 minutes and serve hot.
